Chili Chestnut Stuffing With Sausage

Chili chestnut stuffing with sausage is a riff on a holiday classic that can be enjoyed all year round. It’s delicious served with any meat, from holiday turkey to summer steaks.

We keep it simple in terms of ingredients, but feel free to experiment with festive flavors. Adding orange peel or cranberry sauce, for example, provide a tasty festive touch to the side. Or try some additional herbs, like thyme or rosemary.

In terms of the spiciness, we list “one red chili pepper” among the ingredients. That’s your clue to make the call in terms of overall spiciness of this recipe. Red jalapeño peppers are an excellent medium-heat choice for this recipe. Or, you can go extra-spicy with a fresh red habanero. The habanero also has a delicious sweetness that works well with the sausage.

You can also make individual spicy chestnut stuffing balls instead of a larger serving dish. To make them: Form balls from the stuffing with your wet hands. They should be around the size of golf balls. Then place the chestnut stuffing balls on a non-stick baking tray with an inch between each ball. Reduce the cooking time to 25 minutes and serve as normal.

Ingredients
 
 

  • 1 cup chopped chestnuts you can roast your own or buy canned or boxed
  • 1 lb sausage meat
  • 1 slice bread
  • 1 apple small, shredded
  • 1 cube stock chicken or vegetable
  • ½ cup boiled water
  • 1 red chili pepper chopped
  • 1 onion diced

Instructions
 

Roasting the chestnuts (skip in you purchase pre-roasted)

  • Preheat the oven to 300 degrees Fahrenheit.
  • Use a sharp knife to cut a cross in the top of the chestnut shells.
  • Place the chestnuts on a baking tray and sprinkle with a pinch of salt.
  • Bake in the oven for 30 minutes.
  • Allow to cool then peel off the shells.

Making the stuffing

  • Preheat the oven to 300 degrees Fahrenheit.
  • Boil the water and add the stock cube.
  • Add the slice of bread to a bowl, then pour in the broth mixture.
  • Use a fork to break the bread up into small pieces.
  • Mix in the shredded apple, chestnuts, sausage meat, chopped chili, and onion into the mixture.
  • Place the stuffing into a oven proof tray.
  • Bake in the center of the oven for 30 minutes.
